- Potatoes (boiled & cubed) – 4 medium
- Cumin seeds (jeera) – 2 tsp
- Green chilli – 2 finely chopped
- Ginger – 1 tsp finely chopped
- Turmeric powder – 1/2 tsp
- Red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Garam masala – 1/2 tsp
- Dry mango powder (amchur) – 1/2 tsp
- Oil or ghee – 2 tbsp
- Fresh coriander leaves – for garnish
- Salt – To taste
Step-by-Step Instructions
Step 1
Heat oil or ghee in a pan on medium flame.
Step 2
Add cumin seeds and let them crackle for a few seconds.
Step 3
Add chopped green chilli and ginger. Sauté until aromatic.
Step 4
Add boiled potato cubes and mix gently.
Step 5
Add turmeric powder, red chilli powder, coriander powder, and salt.
Step 6
Cook for 5–7 minutes while stirring occasionally until potatoes become lightly crispy.
Step 7
Sprinkle garam masala and dry mango powder. Mix properly.
Step 8
Garnish with fresh coriander leaves and serve hot with roti, paratha, or curd.
